Chicken Saffron Kebabs

Ingredients :

  • Chicken boneless 200 gms
  • Butter or  ghee for shallow frying (alternately you could grill or air fry them )
  • Coriander leaves fresh , for garnish

Marinade:

  • Processed cheese 3 tspn 
  • Egg yolks whisked 1 (optional )
  • Cream fresh, whisked  2 tbspn
  • Ginger garlic paste 1 tspn 
  • 5 Almonds ground into powder /gram flour roasted (1 tbspn)
  • Coriander powder 1/2 tspn
  • White pepper powder ,freshly ground 1/2 tspn 
  • Green cardamom powder 1/4th tspn
  • Saffron strands  - as per taste ( I lavishly took 1/2 tspn )
  • Salt to taste 
  • Chaat masala for garnish

  • Mash the cheese in a deep bowl

Marination :

  • Mash the cheese in a deep bowl 
  • Add the remaining ingredients for the marinade ,except for the salt .
  • Whisk the marinade till smooth and well blended
  • Taste and add salt.
  • Add the chicken /paneer pieces, mix well to ensure hat it completely coats the pieces.
  • Cover and set aside in the refrigerator for 2-3 hours (the longer the better) .

Cooking :

  • Remove the marinated chicken from the refrigerator and bring it to room temperature .
  • Soak 4 or 5 bamboo skewers in water for about 20 mins and drain.
  • Thread 4 pieces on each skewer .
  • Heat butter /ghee in a frying pan .
  • Put the pieces into the pan and cook till done ,turning the skewers . The pieces would turn golden brown on all sides .
  • Arrange the skewers /pieces on a serving dish ,sprinkle freshly chopped coriander and some chaat masala and serve hot with mint chutney or salad of your choice .

Total calories a whooping 832 cal ( this dish is super rich and can fulfill your daily protein intake almost to around 80 %,yet, you can pamper yourself once in a while with this royalty

PS: You could replace 200 gms of chicken with 200 gms of paneer. The macros would however change
